Custard powder
Custard
powder was developed at Central Potato Research Station, Jalandhar from several
combinations of potato starch and potato flour in two colours and two flavours
viz. light yellow custard powder with vanilla flavour and pink with strawberry
flavour. The custard pudding prepared from pure starch and potato flour
combination (1:9 and 1:4) tasted equally good or better than the corn custard
taken as control. The general appearance and cost of production of potato
custard powder was comparable to the commercially available corn custard
powders.
